Fontvieille stone was first quarried in Roman times. However, it was not until the early 15th century, with the Château de Tarascon site, that it expanded significantly. From that time, the quarries were operated continuously until modern times.

In Provençal, a 'font' was a fountain or sometimes a spring. This is a small building constructed in 1150 in the Fontvieille countryside. It housed the commune's first spring. The commune took its name from this fountain, 'Vieio Font' in Provençal, which translates as 'old fountain.'. It was already in use in Roman times and still supplies the wash house located nearby.

The Le Castellet site, a small rocky plateau, was occupied by an oppidum in the 4th century BC. It was abandoned two centuries later, but redeveloped in the 12th century. Within the château walls was a high tower, which no longer exists, as well as a church dedicated to Saint Mary. Only the apse remains standing: it is semi-domed and supported by eight ribs resting on corbels. These remains are currently located on the land of a private Mas and are therefore inaccessible to the public.

This construction was built in 1646. It serves as a reminder of a famous knights' tournament, 'Le Pas d'Armes de la Bergère', which was organised by King René and held on the island of Jarnègues in 1449. The branches of the Rhône flowed as far as this district for centuries. It was from here that the boats left, carrying goods and men, and for trading purposes. It is the town's only secondary gate.

The chapel is at the entrance to the Château des Baux de Provence. Although it was originally dedicated to the Virgin Mary, it has been dedicated to Saint Catherine since the 15th century. The castle chapel was within the surrounding walls which symbolically protect the entrance to the Château, as was common in the Middle Ages. The building set vertically to the small ditch, remains of which can still be seen, was part of the Château; on the first level, that of the courtyard, it housed the castle chapel. The gaps in the cliff reveal the existence of two levels above the chapel.

This mill was built in 1627 in La Loube, to the north of the village, and supplied the village with flour. It had several successive owners, before once again becoming the property of the commune in the 19th century. It operated until the middle of that century, but only on four days a week; on the other days, the water was reserved for watering gardens. After the death of the last tenants in 1985, the mill was destroyed following a decision by the municipal council. All that remains today is the paddle wheel, which is in good condition.

The restaurant, in a former coaching inn, consists of 2 small rooms combining old stonework and resolutely contemporary materials. Françoise and Alain are in the kitchen and infuse the cuisine with a 'different' spirit to that of the region. From the bread to the desserts, all the dishes are prepared creatively. The menus change according to the season and the trends and desires of the moment. There is a terrace behind the restaurant, shaded from the wind and the times.
